5 Gallon Perry Batch (Our Hard Pears)
Pressed these four days ago. Never froze them. 1.048 SG at around 45 degrees. Added 2/3 c of sugar per gallon to hit 1.054. Acid tested around 3.9 Added 5 tsp nutrient to 5 gal pear cider. Added 1/2 tsp potassium metabisulfate. Added a full packet of SafCider TF-6 right away as well. Just sprinkled ...

Tasted. Not bad. Acid blend from two months ago was actually OK, however, there is a slight rubbery aura while sipping. Tastes more "peachy" though. This one may be OK if it sits in bottles for six months!

Tasted. Good raspberry flavor, but too sweet now? No longer flat. Good acid amount. Try a little less juice next time. Maybe half the amount first.

6 MONTHS AFTER BOTTLING
Tried adding some raspberry juice to a bottle this time. 2 cups. Added good flavor for less overpowering alcohol taste.
Was a bit flat.
Added 1/4 tsp acid blend, which was just enough to bring back the acidity of raspberries.

3 MONTHS AFTER PUTTING IN SECONDARY Still not much peach flavor. This recipe called for 2 1/2 pounds/gallon. I used three. Some people say you should have 6 pounds per gallon to really get flavor.
