DAY ONE

4 pints raspberries
5c sugar

Acid tested at 0.6% after adding 1/2 tsp acid. Accidentally added 1/2 tsp tannin also!

Starting SG was 1.085-1.090

12 HOURS LATER

Added Red Star Premier Cuvee Yeast

SIX DAYS

Test SG daily. At six days, SG was 1.015. Funneled into secondary and airlocked after allowing majority of CO2 to blow off.

TWO MONTHS

Racked off of the lees and topped off with 8oz of tap water.

SEVEN MONTHS & TWO WEEKS

Very Good Flavor!!

Racked, added 3 oz. water, 1/2 tsp of potassium sorbate, 1/8 tsp of potassium metabisulfate. No need to sweeten. Degassed and placed under airlock.
