When to add
Prior to yeast introduction (not needed in perfectly ripened wine grapes)

Form
Powder

Types
Acid blend (combination of citric/malic/tartaric), citric, malic, or tartaric

Dosage
Varies. Some fruits may be too acidic, others may need acid added. Test the must in the primary with an acid test kit.

Purpose
To achieve the correct balance of acidity.
