Dosage
1/8-1/4 tsp/gallon. Does not dissolve well in liquids. Stir briskly in a glass with a bit of water before adding.
Purpose
Typically used for white wines that do not have high levels of tannins typically found in berries, stems, and seeds. Tannin provides the “bite” in wines by balancing the “astringent” side to a wine. Astringent is defined as a rough, harsh, puckery feel in the mouth. When this harshness stands out – it is said to be astringent.
