1 Gallon Hard Cider (July 9, 2008)

NOTE: Started with the same recipe as last year, except that I also tested the acid content. 0.6% - perfect for fruits!

DAY ONE

1/3 pound of sugar (3/4 c)
1 gallon apple cider (golden delicious)

Starting SG of 1.065

TWELVE HOURS

Added 1/2 packet of Red Star Pasteur Champagne yeast.

TWO DAYS

Continue to check SG daily. Funneled into secondary at SG 1.040.

Racked off of the lees and topped off with tap water.

FOUR MONTHS

Added 1 1/2 tsp cane sugar in each 16 oz bottle (1/4 cup per gallon) to provide fizz. Bottled.

REFRIGERATED 12 MONTHS

Not a very good flavor. The perfect amount of fizz though. This year we will try mixing the apples instead of just the sweeter flavored Golden Delicious.
