DAY ONE

Added 2 1/4 c sugar for SG of 1.085
Added 1 1/2 tsp acid blend...too high when tested though - 0.8%!
1 gallon Golden Delicious apple cider

Added Lalvin EC-1118 Champagne yeast.

TWO MONTHS

Racked again - not too much of a "rubbery" taste. No need to sweeten. Added 1/2 tsp. potassium metabisulfate to 1/2 c cold water. Added to the carboy after the racking to stop fermentation.

FOUR MONTHS

Added 1 tsp anti-oxidant. Bottled. More of a "rubbery" taste again. When talking with Brett Klemann, he mentioned that it could be the apples. Golden Delicious may need to be mixed with other more tart, less sweet varieties.
