DAY ONE

4 pints raspberries
5 c sugar

Tested the acid at 0.5%. Added .75 tsp acid blend to raise the level to 0.575%.
Starting SG of 1.085-1.090

Added Red Star Premier Cuvee yeast.

Racked. Added 4T wine conditioner (potassium sorbate).

NINE MONTHS

Tasted a bottle four months after corking. Added 10 mL potassium sorbate to the bottle - delicious, sweet flavor.

ELEVEN MONTHS

Six months after bottling. Excellent :D If any issues, maybe a slight, bitter aftertaste.
