Added Cote des Blancs yeast.

SEVEN MONTHS, TWO WEEKS

Added 15 mL potassium sorbate. Racked. Bottled several days later.

Opened a bottle at 4 1/2 years. Strong elderberry flavor. Very smooth and excellent taste!!! Semi-dry.
