Sugar

Form
Granulated cane or beet sugar. Corn sugar can be used in direct proportion and honey may also be used (1 ΒΌ lbs honey:1 lb granulated sugar)

Purpose
Natural sugars in fruits are often insufficient to allow the yeast to produce enough alcohol.

It has been mentioned by a brewing expert to use less sugar than called for in the "Wine Maker's Handbook of Recipes" to keep the alcohol content in the wine a bit lower.
