Water

Never used distilled water (does not contain elements necessary for yeast health). Use tap water unless it tastes poorly. Spring water may be used. If tap water is biologically unsafe, boil for 10 minutes, then cool below 104 degrees F so the yeast does not die.
Topping up: Distilled water may be used. Do not add boiling water. If boiling, allow it to cool to room temperature first.
