10 to 12 cups thinly sliced rhubarb
1 4-inch cinnamon stick (optional)
7 cups granulated sugar
2 campden tablets
1 tsp. nutrients
1/2 tsp. pectic enzyme
1 pkg. wine yeast
1 gallon water
( 4 c chopped 1" pieces = 1#)
