Re: Peach Wine (From Lang's Peaches) - 2 Gallons

TWO MONTHS LATER
Tasted. Not bad. Acid blend from two months ago was actually OK, however, there is a slight rubbery aura while sipping. Tastes more "peachy" though. This one may be OK if it sits in bottles for six months!

TWO MONTHS LATER
Tasted. Good raspberry flavor, but too sweet now? No longer flat. Good acid amount. Try a little less juice next time. Maybe half the amount first.

Re: 1 Gallon Raspberries From Our Garden (August 2021)

6 MONTHS AFTER BOTTLING
Tried adding some raspberry juice to a bottle this time. 2 cups. Added good flavor for less overpowering alcohol taste.

Was a bit flat.

Added 1/4 tsp acid blend, which was just enough to bring back the acidity of raspberries.

Re: Peach Wine (From Lang's Peaches) - 2 Gallons

3 MONTHS AFTER PUTTING IN SECONDARY
Still not much peach flavor. This recipe called for 2 1/2 pounds/gallon. I used three. Some people say you should have 6 pounds per gallon to really get flavor.

Was a bit flat, so added 1 tsp of acid blend. Next time, start with 1/2 tsp, then add a second 1/2 ...

Re: Red Current (August 2022)

3 MONTHS AFTER PUTTING IN SECONDARY
OK. Slightly earthly flavor. Semi-sweet. Still not a ton of fruit flavor, probably overpowered by alcohol.

Mixed 1/2 tsp potassium sorbate with a little bit of the wine and then added to the entire batch. Added 3 cups of apple/grape juice to back sweeten/add ...

Re: 1 Gallon Raspberries From Our Garden (August 2022)

3 MONTHS AFTER PUTTING IN SECONDARY
Fairly sweet with raspberry flavor.

Mixed 1/2 tsp potassium sorbate with a little bit of the wine and then added to the entire batch. Added 2 cups of raspberry juice to back sweeten/add more fruit flavor + 1 1/2 c raspberry must that was refrigerated in a glass ...

Acid seemed good on the pallet.

Mixed 1/2 tsp potassium sorbate with a little bit of the wine and then added to the entire batch. Added 3 cups of apple/grape ...
