DAY ONE

Followed the recipe using one gallon Golden Delicious cider.

SIXTEEN HOURS

Added Red Star Pasteur Champagne yeast.

SEVEN DAYS
NOTE: It was fairly cool at the time of fermentation.

Funneled into secondary at SG 1.050.

NINE MONTHS

Added 15 mL wine conditioner (potassium sorbate). Added 1 campden tablet and 1 tsp anti-oxidant. Racked again.

Bottled several days later.
