All of the recipes in this wine forum that do not list specific ingredients or recipe instructions utilize the "Winemakers Recipe Handbook" by Massaccesi. The little purple book with 101 one-gallon fruit wine recipes.

Dosage
Varies depending on the fruit. Typically 1-2 tsp/gallon.

Purpose
Most wines that are not well-ripened wine grapes do not have sufficient nutrients and trace minerals (especially nitrogen) for effective yeast fermentation.

WARNING: Yeast Nutrients are not Yeast Energizers. Energizers are used for stalled fermentation or blueberry wines and are used very rarely – and then only ¼ tsp/gallon.
