One Week Later
Drew some of the wine into a plastic, sanitized cup, 1 1/2 cups water, and 30mL (2 fl. oz.) of peach flavoring (not much for flavor otherwise). Added this mixture to the wine after racking again. Poured back into original re-sanitized carboy so that it would be well mixed and instead of vigorously stirring, would remove some of the CO2 at the same time. Placed back into the dark, cool basement closet.

Well, the airlock ran out of water, but the wine tastes like peach...although maybe a bit light on flavor. Racked, added 1/16 tsp potassium metabisulfate, 1 cup cold tap city water and 15 mL of peach flavoring.

Several Days Later
Flat, watery, but peach flavor. Added 1 tsp glycerin to add body, 15 mL peach flavoring, and 30 mL of wine conditioner. Topped with 8 oz. water. Sweet, but good bold peach flavor. Degassed.

Threw it away. Disgusting, but peach flavor. Try this again, but without the mold.
