DAY ONE
1 5/16 pounds sugar (3c)
3/16 tsp tannin
1 tsp nutrient
1/2 tsp pectic enzyme
1 pt raspberries (3/4 pound)
3qt apple cider (golden delicious)
1 1/8 tsp acid blend
2 pts water
1/2 package champagne yeast
Combine all of the ingredients except yeast in the primary.

DAY FIVE
Continue testing the SG daily. By day five the SG was 1.030. Transferred via funnel to secondary carboy.
Added 2c of water to top off. After major CO2 bubble off, set up airlock.
NOTE: Very tasty out of the primary!

Racked, added 2 oz. water, 1/2 tsp of potassium sorbate, 1/8 tsp of potassium metabisulfate. No need to sweeten. Degassed and placed under airlock.
